So... I wanted to make key lime pie for a while now, which is the best dessert i've ever had back on NCL (the cruise ship where i used to work had bomb desserts, if you're ever on a cruise keep that in mind and make sure you try everything). HOWEVER, for the longest time there wasn't condensed milk in the stores here, and when i finally found a good condensed milk, i couldn't find fresh juicy limes, at least not the day i decided i'll finally make this pie. So, i made it with lemons instead. And it's really close to the one i used to eat on the ship, and i'm so happy that i achieved that, because now every time i eat this pie it brings back memories and it's so nice. Scent and flavor are one of the strongest memory triggers.

If you are a fan of cheesecake, you will love this, because to me it tastes like baked cheesecake, only more tart and lemony and creamier.
The recipe is SO easy.
The crust is like a regular cheesecake crust: 250gr cookies/graham crackers and 100gr of melter butter.
The filling is just 2 yolks, 1 can of condensed milk ( which is about 350gr ) & the juice and the peel of two lemons. First you start mixing the yolks for a few minutes, then you add evetything else, mix a few more minutes until it's well combined. Then you bake it for 25 minutes on 180°C.
And that's it. Really, really easy.
Make sure it's cooled over night before you eat it. So creamy!
