Black Forest Pie

Are you a pie person or a cake person? Me personally, I prefer pie. I don't just prefer it, i love pies, all kinds! And i really enjoy making them, there is something about the buttery and fruity smell combined, that makes me really happy and i feel all warm and cozy.

  • 2 and 1/2 cups (315gall-purpose flour, plus more as needed (spoon & leveled)
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 cup (230g16 Tbspunsalted butter, chilled and cubed
  • 1/2 cup (120ml) ice water, plus more as needed

And for the filling i never follow a recipe, I always use whatever fruit I have at home or whatever i'm in the mood for.
This time I used around 4 cups of mixed forest fruits: blackberries, chokeberries and sour cherries and I cooked those with 4 tbsp butter and 1 cup of brown sugar and vanilla. The sugar amount is also a personal preference, you can add more or less depending on how you like it, however with these kind of berries i suggest a bit more sugar because they are very sour. I cooked them on a medium heat for about 20 minutes and then the filling needs to cool before adding it onto the crust.
I baked the pie for about 1 hour - the first 15 minutes at 220'C, and the rest of the hour on lower heat - 180'C.
